Salmon and Broccoli Quiche Lorraine
Ingredients
For the dough:
- 200 g whole wheat flour or coconut flour
- 75 g butter
- 6 tbs cold water about 40ml
- ½ tsp salt
For the filling:
- 300 g broccoli
- 100 g smoked salmon
- 100 g gorgonzola cheese
- 300 g sour cream
- 100 ml milk
- 3 eggs
- ½ tsp salt
- 1 tsp pepper
Instructions
- First, in a large bowl mix the whole wheat flour and the salt. Add the cold chopped butter and use your fingers to quickly and lightly rub the flour and butter together until it resembles fine breadcrumbs.
- Add the cold water and mix it with the flour until a nice dough is formed. Stretch the dough into a round shape and place it in a 22cm diameter tart/ quiche pan greased with butter. Sting a dough with a fork and place the pan into the fridge while preparing the filling
- Wash and cut the broccoli into small pieces. Also, cut the salmon into small pieces. Beat the eggs and mix them with the sour cream, milk, salt, pepper.
- Take the quiche out of the fridge, first place the cut salmon, add the egg mixture over the salmon.
- Next, place the broccoli over the filling. Add the pieces of gorgonzola cheese to cover the entire quiche.
- Place the quiche in the preheated oven and bake it at 180-200°C for about 50 minutes.
